400g High Liner Fish Fillets (any variety)

Green Onion, chopped

1 tbsp
Butter
15 ml
1 tbsp
Flour
125 ml
½ cup
Half & Half Cream
75 ml
1/3 cup
Dijonnaise Mustard Blend
Black Pepper
1)
Bake, poach or microwave fillets according to package instructions.

Meanwhile, fry onion in butter (about 1 minute). Stir in flour until smooth (about 1 minute).

Add cream and mustard gradually; cook on medium, stirring constantly, until desired thickness (about 3 minutes).
4)
Season with pepper to taste.
5)
Garnish with fresh chopped red pepper just before serving.
6)
Makes about 3/4 cup (175 mL).
