Flavoured Butters
Serves: 2 to 4

Metric Imperial Lime & Ginger Butter
15 ml 1 tbsp fresh ginger root, finely minced
10 ml 2 tsp fresh lime juice
1 ml ¼ tsp grated lime rind
Salt to Taste
Metric Imperial Lemon Dill Butter
15 ml 1 tbsp Snipped Fresh Dill
15 ml 1 tbsp Lemon Juice
Salt & Pepper To Taste
Metric Imperial Mustard & Chive Butter
15 ml 1 tbsp Dijon mustard
15 ml 1 tbsp Snipped Chives
5 ml 1 tsp Lemon Juice
Pepper to Taste

 
Preparation

1)  Bring ¼ cup (50 mL) butter to room temperature.
2)  Select a single recipe from above.
3)  Cream butter with recipe seasonings and spread over a package of 400g High Liner Fillets or Scallops fillets.
4)  Cook in oven or microwave until done, using package directions.
