400 g pkg. HIGH LINER Frozen Scallops, thawed
30 mL
2 tbsp
Biryani* or Indian curry paste
15 mL
1 tbsp
olive oil
15 mL
1 tbsp
lime juice

ripe mango, peeled and pitted
2 mL
½ tsp
grated lime rind
15 mL
1 tbsp
lime juice
50 mL
¼ cup
fresh coriander leaves
1)
Pat scallops dry with paper towels.

Combine Biryani paste, olive oil and 1 tbsp (15 mL) lime juice.
3)
Toss with scallops and marinade in refrigerator at least 15 minutes.

Coarsely chop mango and purée in food processor.
5)
Add lime rind, 1 tbsp (15 mL) lime juice and coriander.
6)
Pulse until coriander is coarsely chopped; set aside.
7)
Remove scallops from marinade and place on foil-lined baking sheet; broil for 3 to 5 minutes or until opaque.
8)
Serve scallops with sauce.
