The Captain's Guide to Preparing Fillets
Basic Cooking Rule: For every inch (2.5 cm) of thickness, cook FROZEN FISH for 20 minutes. For THAWED FISH, reduce cooking time by one half.

 

 

Apply the guideline to any of the first three methods below:

Bake


Brush with butter and season as desired. Bake at 450°F/230°C.

Broil

Brush with butter and season. Broil fish 2 to 4 inches (5-10 cm) from heat source.

BBQ

Preheat to medium temperature. Cook fish on foil or in grilling basket 2-4 inches (5-10 cm) from coals. Baste occasionally with seasoned butter, if desired.

Microwave

Brush with butter and season. Cover and cook on high power for about 7 minutes. Let stand 2 minutes then test. If undercooked, microwave for an additional 30-60 seconds, if desired.
