Corn-Crusted Roast Salmon
Serves: 4
Cook Time: 6 to 8 min
Prep Time: 10 min
Metric Imperial Ingredients
75 mL 1/3 cup cornmeal
2 mL ½ tsp each salt, black pepper and dried Italian seasoning
45 mL 3 tbsp creamy Caesar dressing
15 mL 1 tbsp lemon juice
1 1 1 lb/454 g pkg HIGH LINER Wild Pacific Salmon Fillets, thawed
Lemon wedges

 
Preparation

1) Stir together cornmeal and seasonings in a shallow dish.
2) In separate shallow dish, combine dressing and lemon juice.
3) Dip each salmon fillet in Caesar mixture, then dip in cornmeal mixture to coat well on both sides.
4) Place on a lightly oiled baking sheet in single layer.
5) Bake at 450°F (230°C) for 6 to 8 minutes or until fillets flake easily with a fork.
6) Squeeze lemon wedges over fish to serve.
