Prepare Haddock as per directions on package.

Prepare rice as per directions on bag (use your favourite or try a fragrant Basmati or Jasmine rice).

Meanwhile, in large fry pan, heat oil over medium-high heat; cook onion, zucchini, red pepper and garlic, stirring occasionally, for about 5-7 minutes or until tender.
