Family-Style Lemon Pepper Sole Pasta

Bring the flavour to the dinner table with this tasty, healthy and a breeze-to-prepare pasta. Don't take our word for it, listen to your kids. They'll be begging to stay in for once.

Cook time: 20 mins
  • 3 Pan-Sear Selects® Lemon Pepper Sole Fillets
  • 4 cups rotini pasta, cooked al dente
  • 1 tbsp lemon zest
  • 1 lemon, cut in half
  • 2 tbsp olive oil
  • ¼ tsp salt ⁠
  • ¼ tsp black pepper⁠
  • ¼ cup chopped sundried tomatoes (from the jar, in oil) ⁠
  • ¼ cup finely chopped fresh parsley⁠
  • 2 heaping tbsp capers ⁠
  1. Cook rotini al dente according to package directions, once done rinse quickly under cool water and set aside.
  2. Meanwhile, heat a large non-stick pan over medium heat and add in 3 Lemon Pepper Pan-Sear Sole Fillets.⁠
  3. Cook fillets for 20 minutes, flipping once halfway through the cooking. ⁠
  4. Remove fillets from pan and set aside. Using the same hot pan, add in the cooked rotini along with the lemon zest, juice from ½ lemon, olive oil, salt, pepper, sundried tomatoes, parsley and capers.
  5. Sauté the pasta with the other ingredients for 3-4 minutes on medium-high heat until completely heated through and transfer to a large serving bowl.
  6. Flake the cooked sole fillets over top of the pasta and serve family-style. Enjoy immediately.
