Salmon Nourish Bowl Drizzled With Lemon Sauce

Salmon
- 4 Wild Pacific Salmon Fillets, frozen
- 1 tbsp olive oil
- salt and pepper
Lemon Sauce
- ¼ cup mayonnaise
- ¼ cup full-fat greek yogurt
- Zest of 1 lemon + 5 tsp juice
- ¼ tsp kosher salt
- 1 tbsp olive oil
Bowls
- 1 lb/ 454g soba noodles
- 1 cup cooked chickpeas
- 1 cup thinly sliced cucumber
- 1 cup sliced pineapple
- 1/4 cup thinly sliced red onion
- 1/4 cup pumpkin seeds
- 1/4 cup sliced pickled turnip or beet (optional)
- Preheat oven to 450ºF. Place High Liner Salmon Signature Cuts Salmon Fillets on a parchment-lined baking sheet. Brush with oil and sprinkle with salt and pepper. Bake 20 minutes.
- While fish is baking, prepare sauce by whisking together all ingredients.
- Cook soba noodles in salted, boiling water according to package instructions. Transfer to a colander and rinse under cold water until cool.
- Divide noodles among four bowls and top with remaining ingredients. Place a salmon fillet on each bowl and drizzle with sauce.
