If you are going to have a sandwich, have THIS sandwich. It’s satisfying on so many levels. A little bit of heat, creamy, and fresh. This New Orleans inspired po boy is so good that delicious doesn’t begin to describe it. It’s delicious-er.

- 12 High Liner Fish Sticks
- 4 slices tomato
- ½ cup thinly sliced red onion
- ½ cup shredded iceberg lettuce
- ½ cup sliced dill pickles
- 4 tbsp mayo
- 2 8-inch baguettes cut in half
Cajun Spice Blend
- 2 tbsp smoked paprika
- 2 tbsp garlic powder
- 1 tsp black pepper
- ½ tsp salt
- ½ tsp cayenne powder

- Bake High Liner Fish Sticks according to package instructions.
- Mix together the spice blend in a small bowl. Once fish is cooked, immediately toss the fish sticks in the mixture.
- Now it’s time to build the sandwich. Toast the baguette, spread on mayo, and add the fish sticks, followed by the veggies.
- Dig in and enjoy!
